White Fungus Peach Gum dessert

1 white fungus
30 peach gum
16 red dates
32 dried longan
6 pieces rock sugar (adjust to taste)
1 litre water
(Makes 8 take away tubs)

1) Soak white fungus and peach gum in hot water separately until soft (minimim 4 hours, I left it for 7 hours)

2) Remove hard stem and cut white fungus into smaller pieces. Rinse in water.

3) Boil water and add white fungus. Simmer for 30 minutes.

3) Pick out the black bits of peach gum. Rinse in water. Add to boiled water with white fungus and simmer for 30 minutes.

4) Add red dates, dried logans and rock sugar. Simmer for 5 minutes.

5) Serve hot or leave in fridge for cold version.

- Brain child of 2 Indonesian sisters who started Ollella selling cakes and kuehs
- Very cramp eatery with 4 tables
- Went on Sat at 1.30pm and tall tables were taken plus a queue of 4
- Got a table after 10 minutes and orders at counter took 20 minutes while food took another 15 minutes
- Satay was for take away and is recommended and would get 12 for lower unit price next time
- Longtong was nice and lemak
- Set @ main + $3.50 for kueh and drink or main + $7.50 for eclaire and drink
- Kuehs @ buy 4 get 1 free

Note
- kueh is steam to order so there will be a bit of a wait
- we went on Friday, close to closing time at 6pm and was empty 
- owners looked like they were preparing to tomorrow and was in no hurry to close shop
- was initially told to be a 10 minute wait which became 20
- owners were apologetic and only charged us for take aways but not the 2 eat-in kuehs
- pricey almosy bite size kueh ranging from $1.60 for classic to $2.50 for hae bee hiam/bak kwa but is compensated by quality fillings filled to the bream in nice thin skin

Lim Chee Guan is in the same building at #06-01 which explains the booth in the unit and the bak kwa soon kueh. Not sure if it is just for show.
