- previously a pop up home dining private chef
- this is a new restaurant but retained local + jap fusion
- dinner starts at 7.45pm but door opens at 7pm
- S$138+ per pax for 8 courses (6 dishes + 2 desserts)
- 13 seater high chair counter seating with sufficient personal space
- online reservation, 2 months in advance (almost fully booked at time of publication with only single seats available for selective dates in July to August & September bookings not open yet)
- this was a pre-opening tasting session




Snack 1
- cold chawamushi, shao xing jelly, shiro ebi, hamaco shiso flower

Hokkaido scallops, lily bulb vichyssouse
- cold french soup with lily bulb substituting potato, pickled bankwang, japanese menegi, lightly cooked scallops

Tumeric frog legs, local herb salt
- frog legs marinated in tumeric, coated with japanese rice cracker, sprinkled with curry leaf kalamansi powder


Superior stock dobinmushi
- soup steamed in tea pot traditionally during autum when mushroom is in season
- stock of chicken & pork bones, jing hua ham, dried scallops
- prawn & pork balls with water chestnut
- fish maw, mushroom & prawn



Sawara, white curry, milk bun
- white rempah from asian aromatic such as galangal & lemongrass & some chilli for heat
- spanish mackeral from Japan
- kale powder


Crab porridge
- chilli crab sauce
- stock from flower crab 
- rempah + cherry tomato reduction
- sri lanka mud crab brain
- koshi rice from Nagata


Homemade egg noodles, braised local duck, yuzukosho
- duck bones roasted for stock
- poached duck in star anise, cinnamon
- home made egg noodles in dashi & yuzu chilli paste


Guava sorbet, yuzu jelly, cucumber

- Managed to get lunch reservation 3 weeks in advance

- 2 omakase menus available - Herbivore (vegetarian) or  Locavore
- Choice of 6 course (IDR 895k / S$90, with drinks paring + IDR 500k/ S$50 ) or 9 course (IDR 1,195k / S$120, with drinks paring + IDR 650K/ S$65 )

- Ordered 1 six course, 1 nine course, 2 sparkling mineral water for IDR 2,671k / S$270
- Both courses came with 8 amuse bouche, 1 palette cleanser & chocolates/pastries served in congklak ( traditional Indonesian game of sea shells in long board)
- 6 course did not include Into the Sawah, Ayan Hitam and Ice Cream Sandwich
- Arrived at 12pm, finished amuse bouche at 1pm, 9 course at 2.10pm, desserts at 2.25pm & Congklak at 2.40pm
- Best not to schedule any subsequent programs or dinner as it is a long lunch for almost 3 hours and I was quite full from lunch till dinner time

Main 1: A Coconut Fell on the Beach 
- Sumba oyster, Young coconut, Smoked mussel vinaigrette, Oyster emulsion, Seaweed, Rambutan, Kaffir lime leaf oil

Main 2: Eat Your Heart Out 2.0 
- Beef heart pastrami, Mulberry coffee vinaigrette, Pickled mulberries, Tribata capers, Red amaranth leaves, Beef garum powder

Main 3: Lobster Tartar 
- Almost raw lobster, Coconut picked heart of palm, Aromatic oils, Shallot lemongrass sambal, Warm lobster gel, Siracha chilli powder

Main 4: Into the Sawah (aka everything that lives, grows and swims in and around the ubud rice fields) 
- Heritage galuh rice porridge, 65 degrees duck egg yolk, Snails, Frog leg abon, Fern tips, Wildflowers

Main 5: Black is the New Orange - Carrot slow roasted in smoked beef fat, Kecap glaze, Carrot reduction, Spiced carrot puree, Smoked lacto-fermented carrot powder

Main 7: Ayam Hitam
- Jon's chicken grilled with black garlic, Garlic confit puree, Black garlic kecap emulsion, Pickled solo garlic, Green garlic oil, Crispy chicken skin cracker
