Spicy ice kacang

- base of sweet corn & pineapple

- 2nd layer of juicy prawns & corn

- topped with pineapple granita with white salt & coconut milk

Spring bean toastada, sambal hijau

- base of seaweed to mimic south American toastada (crispy flat bread)

- spring beans & peas marinated with sambal hijau (green chilli )

- topped with house made smoked ueso fresco cheese, radish & flowers

Steamed green peas, hokkigai

- Japanese pea puree with clams

- sauce of pea pods, seasoned with sudachi (japanese citrus) & olive oil

Suan cai yu

- house-made preserve vegetable (like white kimchi with herbs) & shima aji (white travelly - spring fish)

- pickled radish & ibazaki sauce made of sake, kombu, plum & Sakura petals

Scallop & otah

- otah encased in brined scallop wrapped in shiso leaf & breaded with japanese crackers, then fried

- on the side is house made salt with curry leaf, limau purut leaf & lemongrass (EXCELLENT !!!)

Beef & daikon broth

- beef ribs in broth of radish & yellow beans

- on the side is house made dip of leek & chilli oil

Sweetbread, tamarillo koloyok, potato pancake

- fried sweetbread = thymus gland (organ from throat or neck) or pancreas from calf or lamb

- tomatoes, pineapple & hawthorn sauce (like south America tamarillo sweet, tangu smoky sauce)

- topped with pickled capsicum & served with potato pancake to be eaten like taco

Nasi liwet, Threadfin panggang, Urap

- nasi liwet - rice cooked in fish stock & coconut milk & aromatics

- grilled threadfin fish with tomatoe-based sambal bajal wrapped in banana leaf

- urap - steam vegetable with sambal fish floss
